  • 3 large ripe bananas (mashed)
  • 3 large eggs
  • 2 cups all-purpose flour
  • 1 cup dark brown sugar
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • Nonstick cooking spray

Instructions

  1. Preheat oven to 350°F. Grease an 8.5×4.5-inch loaf pan.
  2. In a sauté pan, melt butter over medium heat until golden brown and nutty. Set aside to cool.
  3. In a bowl, mix mashed bananas with eggs until well combined.
  4. In another bowl, whisk flour, dark brown sugar, baking powder, cinnamon, salt, and nutmeg until smooth.
  5. Fold banana mixture into dry ingredients and add cooled brown butter. Mix gently until just combined.
  6. Pour batter into the prepared pan and place half a banana on top cut-side up; sprinkle with additional brown sugar.
