  • 1 ½ pounds sweet potatoes, cut into ½” cubes
  • 4 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon ground coriander
  • 1 teaspoon sea salt
  • ¼ teaspoon pepper
  • 1 ½ cups green bell pepper, cut into 1" pieces
  • 1 cup red bell pepper, cut into 1” pieces
  • 14.5 ounces black beans, rinsed and drained
  • ½ cup frozen yellow corn, thawed
  • 3 tablespoons honey
  • 3 tablespoons lime juice
  • 3 tablespoons fresh cilantro, chopped

Instructions

  1. Preheat the oven to 425°F.
  2. In a bowl, mix spices and coat sweet potato cubes with olive oil and spice blend.
  3. Roast sweet potatoes on a greased baking sheet for 20 minutes.
  4. Toss bell peppers in olive oil and seasonings; add them to the sweet potatoes and roast for another 20 minutes.
  5. Combine honey, lime juice, and chopped cilantro to create the dressing.
  6. Add corn and black beans to the roasted veggies; drizzle with dressing and roast for an additional 10-15 minutes.
