  • 4 yellow onions (sliced thin)
  • 2 pounds Yukon Gold potatoes (washed and chopped)
  • 4 tablespoons salted butter (or non-dairy butter)
  • 3/4 cup half & half (or full-fat coconut milk)
  • 1 teaspoon kosher salt
  • 1 cup Parmesan cheese (freshly grated)
  • Fresh herbs (chives, thyme, and sage)

Instructions

  1. Heat olive oil in a skillet over medium heat. Add sliced onions and sauté until caramelized, about 40-50 minutes.
  2. In a large pot, bring water to a boil. Add chopped potatoes and cook for about 20 minutes until fork-tender.
  3. Drain the potatoes and mash them until smooth.
  4. Mix in the butter, kosher salt, and half & half (or coconut milk) until creamy.
  5. Stir in half of the caramelized onions and grated Parmesan cheese.
  6. Transfer to a serving bowl, top with remaining onions and fresh herbs, then serve warm.
