  • 6 cups fresh spinach leaves
  • 1 cup fresh strawberries (sliced)
  • 1 cup fresh blueberries
  • 1/2 cup crumbled feta cheese
  • 1/2 cup toasted pecans
  • 1/4 cup thinly sliced red onion
  • 1/2 cup balsamic vinegar
  • 2 tbsp honey (optional)

Instructions

  1. In a large bowl, combine 6 cups of fresh spinach leaves, 1 cup of sliced strawberries, 1 cup of blueberries, 1/4 cup of thinly sliced red onion, and 1/2 cup of toasted pecans.
  2. Sprinkle 1/2 cup of crumbled feta cheese over the salad mix.
  3. To make the balsamic glaze, simmer 1/2 cup of balsamic vinegar in a small saucepan over medium heat until it reduces by half. Optionally stir in 2 tablespoons of honey once thickened. Allow it to cool slightly.
  4. Drizzle the balsamic glaze over the salad just before serving and toss gently.
