  • 1 lb ground beef
  • 1 small onion, diced
  • 4 cloves garlic, minced
  • 3 cups low-sodium beef broth
  • 1/2 cup milk
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 3 tbsp butter
  • Salt and pepper to taste

Instructions

  1. In a large skillet, melt 1 tablespoon of butter over medium heat. Sauté the chopped onion for 3–4 minutes until softened.
  2. Add the ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat if necessary.
  3. Stir in minced garlic and cook for about a minute until fragrant.
  4. Pour in uncooked rice, beef broth, Italian seasoning, salt, and pepper; stir well.
  5. Bring to a boil, then reduce heat to low and cover. Simmer for 18–20 minutes until rice is tender.
  6. In a small saucepan over low heat, melt remaining butter; stir in cheeses and milk until smooth.
  7. Combine cheese sauce with the beef and rice mixture in the skillet; cook uncovered for a few more minutes.
  8. Serve warm, garnished with fresh parsley if desired.
