  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 6 slices turkey bacon, cooked and crumbled (or omit for vegetarian)
  • 2 jalapeño peppers, seeded and finely chopped
  • 1 green onion, finely chopped
  • 8 eggroll wrappers
  • Vegetable oil for frying

Instructions

  1. In a mixing bowl, combine softened cream cheese, cheddar cheese, turkey bacon (if using), jalapeños, green onion, garlic powder, salt, and pepper until well mixed.
  2. Place an eggroll wrapper on a clean surface and add about 2 tablespoons of the filling diagonally across the center. Fold the bottom corner over the filling, fold in the sides towards the center, then roll tightly to seal.
  3. Heat vegetable oil in a deep skillet to 350°F (175°C). Fry the eggrolls seam side down in batches for about 3-4 minutes or until golden brown and crispy.
  4. Remove from oil and drain on paper towels. Serve hot with your favorite dipping sauce.
