  • 3 cups butternut squash, peeled and cubed
  • 340 g Brussels sprouts, halved
  • 225 g bow tie pasta
  • 340 g cooked chicken or turkey sausage
  • 5 cloves garlic, minced
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • ¼ teaspoon smoked paprika
  • Fresh thyme leaves

Instructions

  1. Preheat oven to 200°C. Toss butternut squash with olive oil, salt, and pepper on a baking sheet and roast for 15-20 minutes until tender.
  2. On another baking sheet, toss Brussels sprouts with olive oil, salt, and pepper; roast for 20-30 minutes until golden brown.
  3. Cook bow tie pasta in boiling salted water until al dente; reserve some pasta water before draining.
  4. In a skillet over medium heat, brown sliced sausage until golden; remove from skillet.
  5. Sauté garlic in the same skillet until fragrant; add butter and melt.
  6. Combine cooked pasta with garlic mixture; fold in roasted vegetables and sausage. Adjust seasoning as needed.
