  • 1/2 cup granulated sugar (for filling)
  • 1 1/2 cups water
  • 2 tablespoons fresh lemon juice

Instructions

  1. Prepare the apricot filling: In a saucepan, combine chopped dried apricots, water, and sugar. Simmer until tender (15-20 minutes). Stir in lemon juice and cool.
  2. Make the shortbread dough: Preheat oven to 375°F (190°C). In a bowl, whisk flour, sugar, baking powder, and salt; cut in cold butter until coarse crumbs form. Mix in egg and vanilla until combined.
