  • 1/8 tsp ground cloves
  • 2/3 cup vegetable oil
  • 2 large eggs, room temperature
  • 3/4 cup brown sugar, packed
  • 3/4 cup granulated sugar
  • 1/2 cup sour cream, room temperature
  • 1 tsp pure vanilla extract
  • 23 large honey crisp apples, grated

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9×9-inch nonstick pan with parchment paper.
  2. In a large bowl, whisk together flour, baking soda, salt, and spices.
  3. In another bowl, mix vegetable oil, eggs, sugars, sour cream, and vanilla until smooth.
  4. Combine wet and dry ingredients gently until just mixed; fold in grated apples.
  5. Pour batter into the prepared pan and bake for 35-40 minutes until a toothpick comes clean.
  6. While baking, melt butter with brown sugar and heavy cream over medium heat for icing; whisk in vanilla and powdered sugar when removed from heat.
  7. Once cake cools slightly, pour icing over it before slicing.
