  • 8 small Granny Smith apples
  • 0.5 cup unsalted butter
  • 3 tablespoons all-purpose flour
  • 0.5 cup white sugar
  • 0.5 cup packed brown sugar
  • 0.25 cup water
  • 1 (9 inch) double-crust pie pastry

Instructions

  1. Preheat the oven to 425 degrees F (220 degrees C). Peel and slice the Granny Smith apples thinly.
  2. In a saucepan over medium heat, melt the butter and stir in flour to form a paste. Cook until fragrant, about 1-2 minutes.
  3. Add white sugar, brown sugar, and water; bring to a boil then simmer until thickened (3-5 minutes).
  4. Press one pastry into the bottom of a pie pan and roll out the second for the lattice top.
  5. Fill the bottom crust with sliced apples, creating a mound in the center. Arrange the pastry strips over the apples in a lattice pattern.
  6. Pour the caramel mixture over the lattice and brush some on top.
  7. Bake for 15 minutes at 425 degrees F, then reduce to 350 degrees F (175 degrees C) and continue baking for 35-45 minutes until apples are soft.
  8. Let cool slightly before serving.
