  • 12 thick-cut slices of brioche bread
  • 1 ¾ lb apples (e.g., Gala and Granny Smith), peeled and diced
  • 4 tbsp salted butter
  • 2 1/2 tbsp all-purpose flour
  • 1 tsp apple pie spice
  • 3/4 cup brown sugar
  • 1/2 cup water
  • 1 cup milk
  • 1 cup heavy cream
  • 1 1/2 tbsp salted butter
  • 1/4 cup + 3 tbsp granulated sugar
  • Pinch of salt
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 4 eggs, at room temperature
  • Optional: turbinado sugar, for topping

Instructions

  1. Preheat your oven to 350°F and grease your baking pan.
  2. In a saucepan over medium heat, melt butter. Add flour, apple pie spice, and brown sugar; mix well before adding diced apples and water. Cook until apples are soft (10–15 minutes).
  3. In another saucepan over medium-low heat, whisk together milk, heavy cream, remaining butter, granulated sugar, salt, vanilla extract, cinnamon, and eggs until combined.
  4. Cut brioche into cubes and layer half in the pan. Top with half the apple filling; repeat layers ending with apple filling.
  5. Pour custard mixture over the layered bread and sprinkle with turbinado sugar if desired.
  6. Bake for 35–40 minutes until golden but slightly wobbly in the center. Let stand for 10 minutes before serving.
