  • 350 g Lotus biscoff cookies
  • 150 g unsalted butter (melted)
  • 3 tart apples (peeled, cored, and sliced)
  • 690 g cream cheese (softened)
  • 100 g Greek yogurt
  • 3 large eggs
  • 50 g brown sugar
  • 50 g all-purpose flour
  • 20 g rolled oats
  • 1 teaspoon ground cinnamon
  • 2 teaspoons cornstarch
  • 75 g granulated sugar
  • 2 teaspoons vanilla extract
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg

Instructions

  1. Preheat oven to 180°C (350°F). Crush biscoff cookies and mix with melted butter. Press into the bottom of a springform pan and bake for 10 minutes.
  2. Toss apple slices with brown sugar, cinnamon, and cornstarch; set aside.
  3. Beat cream cheese and sugar until smooth. Add Greek yogurt, vanilla, spices, and eggs one at a time until well combined.
  4. Layer half of the cheesecake mixture over the crust followed by half of the apple filling. Repeat layers.
  5. Bake for 60-70 minutes until set around the edges but slightly jiggly in the center. Cool completely before adding streusel topping.
  6. Refrigerate for at least four hours before serving.
