  • 340 g all-purpose flour
  • ½ tsp ground cinnamon
  • 2 1/4 tsp baking powder
  • 1/2 tsp salt
  • 125 g butter (room temperature)
  • 225 g granulated sugar
  • 3 eggs (room temperature)
  • 225 g sour cream (14-18%, room temperature)
  • 40 g vegetable oil (e.g., canola oil)
  • 1 1/2 tsp vanilla extract
  • 125 g powdered sugar
  • 1 tbsp maple syrup
  • 1 tsp sour cream
  • 1/2 tsp vanilla extract
  • 12 tsp water

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a baking pan.
  2. Dice apples and toss them with sugar and cinnamon; set aside.
  3. Prepare the crumb topping by mixing flour, brown sugar, cinnamon, and butter until crumbly.
  4. In a separate bowl, whisk together flour, baking powder, cinnamon, and salt.
  5. Cream butter and sugar until fluffy; add eggs one at a time followed by sour cream, oil, and vanilla.
  6. Gently fold in dry ingredients until just combined.
  7. Layer half of the batter in the prepared pan, add apples, then top with remaining batter and crumb topping.
