  • 1/2 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/2 cup quick oats
  • 1/4 cup unsalted butter (melted)
  • 24 ounces full-fat cream cheese (room temperature)
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream (room temperature)
  • 3 large eggs (room temperature)
  • boiling water (for the water bath)
  • salted caramel sauce

Instructions

  1. Preheat oven to 350F (180C). Prepare a 9-inch springform pan by wrapping it in foil and greasing it.
  2. For the crust, mix graham crumbs, brown sugar, and cinnamon with melted butter; press into the bottom of the pan.
  3. Toss thinly sliced apples with brown sugar and cinnamon in a bowl.
  4. In another bowl, mix flour, brown sugar, cinnamon, quick oats, and melted butter to create the crumble.
  5. Beat cream cheese until smooth; gradually add sugars and mix well. Incorporate eggs one at a time along with sour cream and vanilla.
  6. Layer half of the cheesecake filling over the crust, add spiced apples, then top with remaining filling and oatmeal crumble.
  7. Bake in a water bath for about 55 minutes until set but slightly jiggly in the center.
  8. Cool gradually in the oven, then refrigerate for at least four hours before serving.
