  • 1/2 cup Greek yogurt
  • 1/2 cup sugar
  • 1/2 cup apple sauce
  • 1 large egg
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 cup diced apples

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix together the flour, oats, baking powder, baking soda, cinnamon, and salt.
  3. In another bowl, whisk the Greek yogurt, sugar, apple sauce, and egg until well combined.
  4. Gently fold the wet ingredients into the dry mixture until just combined.
  5. Fold in the diced apples.
  6. Pour the batter into greased or lined muffin tins, filling each about two-thirds full.
  7. Bake for 20-25 minutes or until golden brown and a toothpick comes out clean.
  8. Cool in tins for five minutes before transferring to a wire rack.
