  • 34 lbs turkey breast (bone-in or boneless)
  • 2 cups apple cider
  • 4 tbsp butter
  • 1/4 cup brown sugar
  • 2 tbsp apple cider vinegar
  • 1 tbsp Dijon mustard
  • 2 cloves garlic (minced)
  • 1/2 tsp cinnamon
  • Sliced apples (for garnish)
  • Fresh rosemary or thyme sprigs (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C). Pat the turkey breast dry and season with salt and pepper.
  2. In a skillet, melt 2 tablespoons of butter over medium-high heat and sear the turkey breast until golden brown on all sides.
  3. Transfer the turkey to a roasting pan and pour in 1 cup of apple cider.
  4. In a saucepan, combine the remaining apple cider with brown sugar, vinegar, mustard, garlic, cinnamon, and cloves. Simmer until thickened into a glaze.
  5. Brush the glaze over the turkey and roast in the oven, basting every 15 minutes until cooked through (internal temperature should reach 165°F or 74°C).
  6. Let rest for 10-15 minutes before carving. Garnish as desired.
