  • 2 cups digestive cookies or graham crackers
  • ½ cup melted butter
  • 3 cups fresh apple cider
  • 3 cream cheese bricks
  • 1 cup brown sugar
  • 1 cup sour cream
  • 3 large eggs
  • Mulling spices
  • 1 teaspoon cinnamon
  • 1/3 cup reduced apple cider
  • 2 tablespoons all-purpose flour
  • ¼ teaspoon salt
  • 2 tablespoons powdered sugar

Instructions

  1. Reduce 3 cups of apple cider with mulling spices in a pot over high heat until syrupy.
  2. Preheat oven to 350°F (175°C). Combine crushed cookies, melted butter, salt, and powdered sugar; press into an 8” springform pan. Bake for 10 minutes.
  3. Lower oven to 325°F (160°C). In a mixer, beat cream cheese and brown sugar until smooth; blend in sour cream, vanilla, salt, cinnamon, and cooled cider.
  4. Add eggs and flour gently until just combined.
  5. Pour mixture into crust; bake in a water bath for about 90 minutes until edges are set but center wobbles slightly.
  6. Cool gradually in the oven before chilling in the fridge for at least 8 hours.
