  • 2 tablespoons neutral oil
  • 2 cups fresh apple cider
  • 2 cups chicken stock or broth
  • 2 tablespoons Dijon mustard
  • 1 tablespoon dehydrated minced onion
  • 1 head garlic, sliced
  • Fresh rosemary and thyme sprigs
  • 1 red onion, thickly sliced
  • 2 firm apples, peeled and cut into wedges
  • Kosher salt
  • Freshly cracked black pepper

Instructions

  1. Preheat the oven to 325°F.
  2. Trim excess fat from the beef shoulder roast and season generously with salt and pepper.
  3. Heat oil in a large Dutch oven over medium-high heat; sear the beef until browned on all sides.
