Ingredients

  • 1 can chickpeas (15 oz), drained and rinsed
  • 1 can pumpkin purée (15 oz)
  • 2 cloves garlic, minced
  • Juice of ½ lemon
  • ⅓ cup tahini
  • 1 tbsp pure maple syrup
  • 1 tsp kosher salt
  • 1 tsp ground cumin
  • ¾ tsp ground cinnamon
  • Pinch cayenne pepper
  • ¼ cup olive oil
  • ¼ cup ice water

Instructions

  1. In a food processor, blend the chickpeas, pumpkin purée, and garlic until finely chopped.
  2. Add lemon juice, tahini, maple syrup, salt, cumin, cinnamon, and cayenne pepper. While blending, slowly drizzle in olive oil.
  3. Gradually add ice water until you achieve a smooth consistency.
  4. Transfer to a serving bowl and garnish with olive oil and optional toppings like pomegranate arils or fresh herbs.
